stalks baby bok choy, stems chopped
large dried shiitake mushrooms
garlic cloves, sliced
tablespoon sesame oil
tablespoon soy sauce
1. Soak mushrooms in warm water for 20 minutes until softened. Slice in half and set aside, reserving about 1/2 cup of the mushroom water. 2. Heat skillet to high and add sesame oil. When hot, add in garlic and stir fry until fragrant, about 1 minute. 3. Add in baby bok choy and mushrooms and stir fry until lightly wilted, about 2 minutes. Add in the reserve mushroom water (this helps to steam the bok choy a little, speeding up the cooking process and adding in flavor as well). 4. Add in soy sauce and sugar, mix well, and enjoy!
