Lemonade Party Cake

When life hands you lemons, make lemonade cake! This moist lemon cake drizzled and filled with an easy lemon filling will remind you of summer any time of year. (Betty Crocker)

Ingredients

  • 1 package Betty Crocker SuperMoist lemon or yellow cake mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 can (6 ounces) frozen lemonade concentrate, thawed
  • 3/4 cup powdered sugar
  • 1 container Betty Crocker Whipped fluffy white or fluffy lemon ready-to-spread frosting
  • Yellow colored sugar, if desired

Preparation

Step 1

1 . Heat oven to 350°F. Grease bottom only of rectangular pan, 13x9x2 inches, with shortening.


2 . Make cake mix as directed on package, using water, oil and eggs. Pour into pan.


3 . Bake 33 to 38 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes.


4 . Mix lemonade concentrate and powdered sugar. Pierce top of warm cake every 1/2 inch with long-tined fork, wiping fork occasionally to reduce sticking. Drizzle lemonade mixture evenly over top of cake. Run knife around side of pan to loosen cake. Cover and refrigerate about 2 hours or until chilled.


5 . Spread frosting over top of cake. Sprinkle with sugar. Store covered in refrigerator.

I used whipped cream in place of frosting for a lighter cooler cake!

I made this for a party of 80. I had to make multiple copies to give out. I did use a cream cheese lemon icing that made it even more special.

This was a hit at our summer party. It was just the right flavor for after a BBQ dinner. The lemonade poured over the cake gave it a moist, lemony taste that added enough zing without being bitter. Would make this again!

I was worried that this would be too sweet, but it was a nice mix of sweet and tart at the same time. Everyone loved it. Will definitely make again!

I made this cake for my husband's birthday and he absolutely loved it. I skipped the can icing and made scratch lemon cheesecake icing, but followed the recipe exactly for the cake and glaze. One thing you need to watch out for is the size of your lemonade concentrate!!! Around here anyway, lemonade concentrate is only stocked in 12oz cans and the recipe calls for 6oz. I did not notice this until after I had blended the concentrate and powdered sugar. I had read a couple of reviews that the cake was a wet sloppy mess, and it was too tart. Well, I think maybe the cooks in those reviews may have used a whole 12oz can. There would not be enough powdered sugar to offset the tartness, it would be twice the glaze required, and much much thinner/watery. I only caught it because I read the reviews and was watching for what might have gone wrong. Mine was already mixed up so I just added extra powdered sugar, then halved the glaze mixture and it turned out fine.

All I can say is... WOW!!! If you're a lover of lemons, then this is the recipe for you!! I used the whipped vanilla frosting and it turned out great, but since I love love love the lemony flavor, I'm going to use the lemon frosting next time.

This cake is so easy to make and so flavorful. Those who say this is soggy did something wrong. I was unable to find the 6oz. can of lemonade concentrate so I bought the 12oz. can and divided it in half. I've used both halves of the can as I had to make two cakes. I also could not find the Whipped Lemon frosting so I used the Rich & Creamy Lemon frosting on both cakes. Give this one a try. Be sure not to use a dinner fork to poke the cake. Use a three-tine cooking fork to poke the cake.

A delightful EASY summer treat! This is my second time making this recipe and I get raves about it. I'm going to experiement with different concentrates in the future but I highly recommend using the lemon cake mix and lemonade. Fantastic!

Even though I'm not a big fan of lemon, this cake made me one! Very refreshing and cool dessert to help sooth oneself from the heat. I definitely would make it again but instead of using the vanilla cake mix, I plan to use strawberry instead to make a strawberry lemonade cake.
