    hard boiled eggs

  • 1

    medium avocado, diced small

  • 3

    tablespoons mayonnaise

  • 2

    teaspoons freshly squeezed lemon juice

  • teaspoon garlic powder

  • Cayenne pepper or paprika, to taste

  • Salt to taste


Slice your hard boiled eggs in half lengthwise and scoop out yolks. Mash yolks and avocado together with a fork, stir in mayo, lemon juice, garlic powder, cayenne pepper, and salt to taste. Fill your empty egg whites with yolk mixture and place on a serving plate. Sprinkle with cayenne or paprika. Tip: Prepare these just before serving, because avocados will turn dark, I totally don't care about that, tastes the same! But you never know with guests...
