Ingredients
- 1 cup almonds, peeled and ground
- grated rind from 1 lemon
- 1/2 cup plus 6 tablespoons sugar divided
- 2 medium green apples, cored and peeled
- 1/2 C butter, melted
- 4 large whole eggs
- 1 1/2 C flour
- 2 t baking powder
Preparation
Step 1
Preheat oven 350
Mix ground almonds with lemon ring and 1/2 cup sugar
Peel apples and cut them into quarters and then into thin slices
Melt butter
In separate bowl, beat the eggs, with 6 T of sugar.
Add the melted butter, the flour and the baking powder and beat well.
Pour the mixture into an 8 inch cake pan, lined with parchment paper
Press the apples into the mixture, pushing them right dow into the pan so they are covered.
Sprinkle the mixture with the sugar almond and lemon mix.
Bake 35 to 45 minutes or until toothpick inserted comes out clean.
