Ingredients
- 5 c. all purpose flour
- 2 pkgs. (4 1/2 tsp.) active dry yeast
- 2 tbsp. sugar
- 2 tbsp. olive oil, divided
- 2 tsp. salt
- 2 c. warm water

Preheat oven to 500F. If you have a pizza stone put in oven to heat.
In warmed bowl with hook attachment, put the warm water, yeast, sugar and 1 tbsp. olive oil. Allow to sit til yeast begins to foam. Add flour and salt and beat until smooth and pulls away from the side of the bowl.
Drizzle 1/2 the remaining oil over the top of the dough and turn the ball of dough over to coat the dough. Cover with towel and allow it to rise about 1 hour - should double in size.
Punch dough down and put on a lightly floured surface. Hand knead. Put back into bowl and drizzle with remaining oil. Turn dough over, cover and rise a 2nd time (another hr.)
Punch down again and it is ready to roll out.
Sprinkle pan with corn meal. Put roll dough onto pan and add your favorite toppings.
Bake at 500 F for at least 15 minutes on middle rack. (Try 12 minutes on bottom rack and see if that works).
This makes 4 pizzas.
You can freeze the dough. Dust balls with flour and put in zip lock bag. Take frozen ball out the day before and thaw in fridge.
