Carrot Muffins/Cake

Ingredients

  • Frosting:
  • 3/4 cup vegetable oil
  • 3/4 cup brown sugar
  • 3 eggs
  • 1/4 cup maple syrup
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups grated carrot
  • 1 package cream cheese, room temperature
  • 1/4 cup unsalted butter, room temperature
  • 1 1/2 cups icing sugar, sifted
  • 1 1/2 teaspoon vanilla

Preparation

Step 1

Preheat oven to 325 degrees.

Grease a muffin pan/8 inch square pan. Whisk together oil, brown sugar, eggs, maple syrup. In a separate bowl, sift flour, baking powder, baking soda, salt and cinnamon. Stir into wet mixture and blend. Stir in carrot and pour into greased muffin pan. Bake for 30 minutes. Cool completely before icing.

Frosting:

Beat cream cheese and butter together. Beat in icing sugar until smooth and stir in vanilla. Spread over cooled muffins.
