Glazed Cranberry Orange Loaves

Ingredients

  • Bread:
  • 3 c flour
  • 1 1/4 c sugar
  • 1/2 t salt
  • 1 T baking powder
  • 1/2 c pecans, Coarsely chopped
  • 3/4 c butter, melted
  • 1 orange
  • 2 eggs
  • 1 1/4 c milk
  • 1 c craisins
  • Glaze:
  • 1/2 powdered sugar
  • 1 T milk

Preparation

Step 1

Preheat oven to 350*. Grease bottom of mini loaf pans. Set aside. Combine flour, sugar, salt, and baking powder. Chop Pecans, then add. Mix well and set aside.

Melt butter. Add 1 T orange zest, 1/4 c orange juice, and eggs. Whisk til well combined. Add butter mixture to dry ingredients. Mix just until moistened. Do not over mix. Gently stir in craisins.

fill each pan with 1 c batter. Bake 40-45 minutes or til pick inserted in middle comes out clean and tops are golden brown. Cool in pan for 5 minutes. Loosen sides of loaves and remove to cooling rack. Cool completely.

For glaze, mix sugar and milk till smooth; drizzle evenly over cooled loaves.
