Breakfast Burrito for One

Ingredients

  • 2 T finely chopped onion
  • 1 T finely chopped, seeded jalapeno pepper
  • 2 eggs, lightly beaten
  • 1/4 c shredded cheddar cheese
  • 8 " tortilla
  • 2 T red or green salsa

Preparation

Step 1

1. Finely chop onion and pepper. Heat saute pan over medium-high heat. Add onion and jalapeno pepper; cook and stir until softened, about 5 minutes. Add eggs; cook 1-2 minutes or until soft-set. Remove from heat; add cheese and stir gently until melted.

2. Spoon egg mixture over tortilla. Top with salsa and roll up. Serve
