Sausage and Tomato Bow Ties

This satisfying pasta dish uses spicy italian style chicken or turkey sausage for great flavorwith a lot less fat than traditional port sausage. When combined with the mozzarella, it's an instant classic.

Ingredients

  • 3/4 lb bow tie pasta (farfalle)
  • 2 tbsp olive oil, divided
  • 3/4 lb hot italian turkey or chicken sausages, sliced
  • 1 red onion, cut inot slivers
  • 1 pint cherry tomatoes, haved
  • 1 1/2 tbsp balsamic vinegar
  • 3/4 dried marjoram or oregano
  • 3/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup boccancini (small mozzarella balls), about 16 total
  • 1/4 cup italian parsley, chopped
  • grated parmesan (optional)

Preparation

Step 1

1. Bring large pot of salted water to boil and cook bow ties according to package directions, or just until at dente.
2. Meanwhile, heat large nonstick skillet over deium heat. Add 1 tbsp of oil and sausage slices; cook 4 mins. turn over sausages and push to edges of pan.
3. Add onions in center of pan. Cook 4 mins, stirring occasionally, until onions are softened and sausages are cooked through. Stir in cherry tomatoes, vinegar, oregano, salt and pepper; cook 2 mins, stirring.
4. toss together drained pasta, sausage, tomatoe mixture, boccancini and parsley inserving bowl or pasta cooking pot. Serve with parmesan, if you wish.
