Low Carb Breakfast Taquitos

Makes 8 pieces–4 Servings–8 Net Carbs per serving

Ingredients

  • 4 - Low-Carb Tortillas - (I use LaTortilla Factory)
  • 8 oz. Hot Italian Breakfast Sausage
  • 1 Cup Sharp White Cheddar Cheese - Shredded
  • 6 Eggs
  • 1/3 Cup Yellow Bell Peppers - Chopped
  • 1/4 Cup Onion - Chopped
  • 3 Whole Mushrooms - (I used Baby Bellas)
  • 1 Large Green Onion - Chopped (As a garnish)
  • 4 Tbs. Salsa
  • 4 Tbs. Butter - Divided
  • Onion Salt
  • Italian Seasoning

Preparation

Step 1

Preheat oven to 400*

Saute veggies in 2 Tbs. Butter, Salt and Pepper, over medium heat

In a separate pan cook the sausage over medium heat until all the way cooked through. Drain excess grease and add to veggies

Fork whisk the eggs and the salsa

Add egg and salsa mixture to the meat/veggie mixture and cook until the eggs are scrambled

In the center of all 4 tortillas, put a layer of cheese, top with 1/4 of the scramble mixture and top with another layer of cheese.

Roll tortillas tightly (packing the ends with any extra scramble mixture) Place on a buttered baking sheet

Melt the remaining 2 Tbs. of butter and brush on top of the rolled tortillas, Sprinkle the top with onion salt and italian seasoning.

Bake on the top rack 10-12 minutes. Flip over, give another light brushing of melted butter and cook for 10-12 minutes more or until nice and crispy on both sides

Cut in half,SERVEANDENJOY!! I served with salsa and sour cream * *Not included in the carb count below* *
