MY NOTES: This is also tasty using mixed frozen peas and carrots. It also might be tasty added a little chopped red or green peppers to the ground beef mixture.

Ingredients

  • Browned ground beef and onion
  • Mushrooms, canned or fresh
  • Brown or beef gravy (preferably beef)
  • Green beans or corn
  • Hot mashed potatoes

Preparation

Step 1

Mix ground beef onion, canned mushrooms and gravy. If using fresh mushrooms, saute them first in butter. Place meat-gravy mixture in individual casseroles (bigger for Jack than me!) Place green beans or corn on top. Top all with hot mashed potatoes. Dot with butter and sprinkle with paprika.Place on baking sheet and bake at 350 degrees for 35-40 minutes or until hot and bubbly.

NOTE: Cheddar cheese mashed potatoes are AWESOME in this! If using plain mashed potatoes, dot the top with butter and sprinkle with Parmesan cheese. Be sure and use dishes that are deep enough - this casserole tends to bubble over!
