Toasted Coconut Shortbread

Ingredients
- Bake at 250 fo 10 minutes and then 350 for 20 minutes
- 1/2 cup coconut flakes
- 2 sticks butter at room temp
- 1/4 cup P. sugar
- 1/4 cup sugar
- 2 14 cups flour
- 1/4 tsp B soda

Step 1
Put coconut on baking sheet and bake for 10 minutes till golden, Set aside to cool
Beat sugar, butter and coconut until smooth and creamy. Add flour, and salt and beat till smooth. Form dough into a 1 1/2 inch log. Wrap in parchment paper and then place in plastic bag and place in frig. or freeze.
Heat oven to 325.
With tip of knife c 1/4 to 1/2 inch slice and place on baking sheet 2 inches apart. Bake till edges are getting brown or 10 minutes. Cool on rack.
