Braised Chipotle Pork Butt Tacos

  • 4 pounds bone-in pork butt
  • 3 tbs olive oil
  • salt & pepper
  • 1 onion sliced
  • 3 cloves garlic
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 2 Chipotle Peppers in Adobo
  • 1 bottle Mexican beer
  • 2 quarts Chicken Stock
  • Corn tortillas
  • Fresh Cilantro
  • Salsa
  • Queso Fresco
  • Avocado
  • Lime Wedges

Step 1

Season pork butt generously on all sides with salt/pepper.

In large dutch oven over med-high heat, heat oil and sear butt on all sides. Remove from pan and add onions, garlic, coriander, cumin and a pinch of salt - add more oil if necessary. Cook onions until softened.

Deglaze pan with beer. Add chipotles and place pork butt back in pan and bring to boil. Add chicken stock to 3/4 of the way up the butt (roughly 2 quarts).

Bring stock to boil and place pan in oven. Braise pork butt for about 3 1/2 hours or until crazy-fork tender.

Using two forks, shred pork and serve with warm tortillas. Build tacos as desired.
