Lemon Sherry Chicken

Ingredients

  • 1 1/2 lb. Boneless Skinless Chicken Breast - Cut into tender size pieces
  • 1/4 Cup of Cooking Sherry
  • 2/3 Cup of Heavy Cream
  • 1 Cup Shredded Mozzarella Cheese
  • 2 1/2 Tbs. of Lemon Juice
  • 1 Tbs Lemon Pepper Seasoning
  • A few sprigs of fresh Italian Flat Leaf Parsley - Chopped

Preparation

Step 1

Over medium to medium to medium-high heat, heat the cooking sherry

Add chicken to the pan and saute the chicken in the sherry until it is almost cooked all the way through

Add the heavy cream, lemon juice, and lemon pepper seasoning, stir in, reduce heat to low and let simmer until the chicken is all the way cooked

Add the mozzarella cheese and half of the parsley to the sauce and allow the sauce to thicken

Use remaining parsley to garnish.
