Fettuccine with Peas & Proscuitto

Ingredients

  • 3 1/2 c chicken broth
  • 2 c milk
  • 3/4 # dry noodles
  • 1 1/2 c frozen peas
  • 1 oz proscuitto
  • 1 1/2 tsp cornstarch
  • 1 c sour cream
  • 1/2 c parmesan
  • 1/4 tsp nutmeg

Preparation

Step 1

In large pot mix broth milk and pasta. Cover heat to boil -high heat. Stir, reduce heat to med high and cook 5 min.
Add peas and stir frequently until tender 2-4 min. Cut proscuitto into thin slices.
In small bowl mix cornstarch w 1 tbs water and blend. Add to pasta mix and stir well until sauce boils and thickens. Add sour cream, cheese, nutmeg and salt & pepper. Stir until well blended and heated through 1-2 min. Add proscuitto
