Spinach Salad w/ Dressing

  • Dressing:

  • C ketchup

  • ¾

    C sugar

  • ¼

    C red wine vinegar

  • C Vegetable oil

  • 4

    green onions, chopped (including tops)

  • 1

    tsp Worcestershire sauce

  • Salad:

  • 1

    10 oz bag baby fresh spinach

  • ½

    lb fresh mushrooms

  • 8

    slices of bacon, fried and crumbled

  • 4

    hard boiled eggs


For Dressing: Early on day of serving, combine all dressing ingredients. Place in glass jar and refrigerate. Shake well before using. For Salad: Wash spinach several times to remove all sand. Tear off stems and tear spinach into bite-size pieces. Dry spinach with clean towel. Place in large salad bowl. Wash and slice mushrooms. Slice boiled eggs; add to salad bowl with mushrooms. Top with bacon pieces. Tip: use kitchen scissors to cut uncooked bacon into the desired size. Cut several slices at a time and bacon will separate into individual bits as it cooks.
