Balsamic-glazed Salmon

Ingredients

  • 3/4 C balsamic vinegar
  • 2 TBLS maple syrup
  • 1 TBLS Dijon mustard
  • 1 garlic clove, minced
  • Vegetable oil cooking spray
  • 4 (6 oz) center-cut salmon fillets, skinned
  • 2 TBLS olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground pepper
  • cook salmon 18-20 minutes, make only 1/2 glaze

Preparation

Step 1

Place an oven rack in the center of the oven. Preheat over to 400 degrees

In a small saucepan, bring the vinegar, maple syrup, mustard, and garlic to a boil over medium heat. Reduce the heat and summer until thick, about 12 minutes. Set aside to cook for 5 minutes.

Spray a small baking sheet with vegetable oil. Arrange the salmon fillets in a single layer on the prepared baking sheet. Drizzle both sides of the salmon with olive oil and season with salt and pepper. Roast for 8-10 minutes, until the flesh flakes easily when prodded with a fork.

Transfer the salmon to plates and drizzle with the glaze.
