Ingredients

  • 1/3 Cup Butter, Softened
  • 1/3 Cup Applesauce
  • 1 Cup Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 3/4 tsp Ground Nutmeg
  • 1 1/2 Cups Rolled Oats
  • 1/2 Cup All-purpose Flour
  • 1/2 Cup Wheat Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 Cup Chopped Hazelnuts
  • 1/4 Cup Sunflower Seeds
  • 1/2 Cup Plus 2 Tbsp Flax Seeds

Preparation

Step 1

1. Preheat oven to 375 degrees F (190 degrees C).

2. In a large bowl, cream together the butter, sugar, and apple sauce until light and fluffy. Beat in the egg, then stir in the vanilla and nutmeg.

3. In a separate bowl, combine the oats, flours, baking powder, baking soda, salt, hazelnuts, sunflower seeds, and flax seeds; gradually stir into the creamed mixture.

4. Drop by rounded spoonfuls, a couple of inches apart, onto cookie sheet(s).

5. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
