Grammies' Rhubarb Cream Pie

  • 2 c. rhubarb, cut up small
  • 1 unbaked pie shell
  • 3 egg yolks, beaten
  • 1 c. sugar
  • 3 HEAPING T flour
  • 1 1/2 c. milk
  • 1 t. vanilla
  • 3 egg whites
  • 6 T. sugar

Preparation

Step 1

Place rhubarb in covered casserole, bake without water until soft but not mushy. (30 min. @ 350). Cool and place in pie shell.

Mix together egg yolks, sugar, flour, milk, and vanilla. Pour over rhubarb. Bake at 450 for 15 minutes, 350 for 1 hour until set. Cool.

Beat egg whites to soft peak, gradually add 6 T sugar until meringue is fairly stiff. Cover pie with meringue and bake at 300 until slightly browned (20 mins).
