Ingredients

  • 6 whole artichokes, trimmed
  • 3 carrots, peeled & finely diced
  • 1 med. yellow onion, peeled & finely diced
  • 1/2 c. olive oil
  • 1/4 c. chopped parsley
  • 1/4 c. lemon juice
  • 1 tblsp dried oregano
  • 1 tblsp dried basil
  • 1 tsp black pepper
  • 1/2 tsp salt

Preparation

Step 1

Place artichokes in deep heavy pot & just cover with water.
Add remaining ingredients. Cook partially covered at a gentle boil until leaves pull away easily - 40 min
Transfer artichokes to a large serving platter. Strain the cooking liquid & strew vegetables and herbs over the artichokes.
Serve hot or cool to room temperature.
