Peanut Butter Fudge Iced Brownies

Ingredients

  • 1 box brownie mix, prepared according to package directions*
  • 1-1/2 cups sugar
  • 7 tablespoons milk
  • 2 tablespoons shortening
  • 2 tablespoons margarine
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup creamy peanut butter

I’ve lost count of how many of you have tried this icing since I first brought it to Southern Plate back in 2008 on Red’s birthday cake. Our family tradition has us putting it over a yellow cake but the combination of chocolate brownies paired with this old fashioned boiled icing is a whole new level of old fashioned decadence – so much so that I’m devoting a whole new post to it!

We’re gonna start with boxed mix made brownies. I used two boxes of mix to make mine extra thick.

If you do that you need to cut your oven temperature down to 325 and add about fifteen minutes to the baking process.

As far as which mix to choose goes, I usually get Kroger brand or some other generic but when I went to Krogers this brand was on sale for $1.00 a box. I’d go for whatever is cheapest where you shop because I’ve never met a brownie mix I didn’t like

You don’t have to use two boxes of mix, one is fine and you get to taste more of the icing!

You can also make them from scratch by using your own recipe or Susan Spencer’s Grandmothers recipe for

as for me and my house, we will make them from a mix today.

Folks that turn their noses up at anything that was baked for them, be it from a mix or completely from scratch, don’t deserve to have people making them brownies anyhow. Snootiness doesn’t bother me though, because that just means there is extra room in my life for good hearted folks with more sense

Place your milk, sugar, shortening, margarine, and salt in a good sauce pot and put this over medium heat.

Stir constantly while you wait on all of it to melt and come to a boil.

This is the icing mixture as it has come to a boil.

What you are going to do is stir it constantly until it comes to a full rolling boil and then stop and let it boil on it’s own (no stirring) for two minutes.

Remove from heat and pour in vanilla.

Add in your peanut butter and stir quickly until it is all melted and well blended.

Folks, I’m NOT kidding about stir quickly here. This sets up fast.

Now this is ready to pour.

Pour over your cooled brownies and spread to cover it all.

Prepare brownies according to package directions and allow to cool completely before beginning icing.

In heavy saucepot combine the sugar, milk, shortening, margarine, and salt. Bring to a rolling boil while stirring constantly.

Once it reaches a rolling boil stop stirring and let boil for two minutes or until it reaches soft ball stage (I don't use a thermometer, I just let it boil for two minutes).

Remove from heat and quickly stir in the vanilla and peanut butter. Beat until smooth and quickly spread over the brownies.

I made these and took them to work ( a new job) today. What a hit they were! I also made the Oreo balls and everyone couldn’t get enough of them. I made the brownies with peanut butter fudge icing yesterday with my 6 yr old grandson…and I just had to let you know how much we all loved them ! They were super easy to make…even a 6 yr old can mix them up. I did the stove top cooking of the icing, but he measured everything out and best of all he got to lick the pan and the spoon.

I have made the Laundry Detergent and I really like it. It was easy to make, and I am enjoying using it. My grocery store didn’t have Fels Naphtha, but they did have the Zote brand and I got that. Next time I’ll look elsewhere to find the Fels Naphtha to see which I like best. I’ve also used a number of your other recipes and have loved every one of them. Don’t keep mixes on hand, except yellow cake mix to use with Cake Doctor recipes – so I made Susan Spencer’s brownie recipe to go under this peanut butter icing. The first day I thought ‘these brownies leave something to be desired’ but — oh, my goodness, the second day and — after freezing some of the leftovers and getting them out to enjoy — they are the BEST! They age into a wonderful chocolate treat. I will make them again and I have only used one old favorite brownie recipe of my own for about forty years but —- will use this one when I need/want a chocolate fix again.

These brownies are the most amazing brownies EVER.. and I mean it!!! A friend was visiting who was a huge fan of chocolate cake with peanut butter frosting. His birthday was this past friday. I made this recipe (using Ghirardelli Triple Chocolate Brownie Mix), decorated it with piped melted chocolate chips and served it without having ever made it before. A little bold.. maybe.. but your recipes are always awesome! I felt confident from experience in making your other recipes, that I could take it for granted that your heirloom recipe for pb frosting would be perfect. I was right!!! He absolutely loved it and asked for a copy of the recipe. So, I’m sharing a link of this on his facebook page and we’ll all have to scoot down a little and make another place at the virtual Southern Plate family table for another new member! hey christy i’m trying to make my mom a birthday surprise and i don’t know how to make a cake well i could but don’t have the ingredients or money to go buy them but i do have everything here except the shortening is it necessary to use that if so i guess ill have to figure something else out i don’t want to make the usual brownies cause i always make brownies so i hope u get back to me soon because Friday February 17 is her birthday.

I made this frosting for some chocolate “wacky cake” (known as Pipe Creek Cake in SE Ohio circles). First, ya gotta love a cake recipe with no butter, eggs, or milk – yay for cheap AND yummy! Second, I cooked this frosting closer to 3.5 minutes than the two Christy did. I got distracted. We won’t tell anyone I was distracted by watching the microwave timer and realizing how dirty my microwave was, OK? Anyway, the frosting was a little more firm than it would have been otherwise, but still tastes amazing. I had made an 8×8 cake, so I used about half the frosting as such, and poured the other half into a loaf pan lined with parchment paper that I had sprayed with PAM. It is some of the best peanut butter fudge ever. I’m thinking of adding this recipe to my Christmastime repertoire as fudge. Great!
