Soft Shell Crabs

Ingredients

  • 2 soft shell crabs, fresh and cleaned (either clean them yourself or have fishmonger do this for you)
  • 1 C whole milk
  • flour
  • salt
  • pepper
  • cayenne pepper
  • 1 Tbsp olive oil
  • 1 Tbsp butter

Preparation

Step 1

Put cleaned soft shell crabs in a bowl and cover with milk. Let soak for a minimum of 30 minutes.

In a large skillet on medium high heat, add the olive oil and butter and let heat until butter begins to sizzle. In the meantime, drain the crabs and dredge in flour seasoned in salt, pepper and cayenne pepper.

Place the crabs in the skillet and cook until you can see the edges beginning to brown. Do not turn until you see evidence that the underside has browned as you only want to turn once. Turn the crabs and cook until browned on the other side.

Remove from skillet and let drain on paper towel. Serve immediately.
