Ingredients
- 1 (16-oz.) package frozen butter beans
- 1 (16-oz.) package frozen corn, more or less
- 1 large red onion, cut into thick slices
- 1 large red bell pepper, cut into rings
- 3/4 cup mayonnaise
- 3 Tbsp. chopped fresh basil
- 1 garlic clove, pressed
- 1 tsp. salt
- 1 tsp. Worcestershire sauce
- 1/2 tsp. freshly ground pepper
- 1 cup halved grape tomatoes
Preparation
Step 1
1. Cook butter beans and corn. Meanwhile, grill red onion and bell pepper. Mix together and let cool.
2. Chop onion and bell pepper.
3. Stir together mayonnaise and next 5 ingredients. Stir in tomatoes, corn, onion and pepper pieces. Add salt to taste. Cover and chill 2 to 8 hours before serving. Can store for 3 days in refrigerator.
