Hot Dog Macaroni

Ingredients

  • 3 1/2 ounces uncooked macaroni rings (about 1 cup)
  • 1/2 cup creamed cottage cheese (small curd)
  • 1 egg, slightly beaten
  • 3/4 teaspoon salt
  • Dash of pepper
  • 1/2 cup shredded sharp Cheddar cheese (about 2 ounces)
  • 2 frankfurters, cut into thin slices
  • 2 medium tomatoes, sliced
  • 1 egg
  • 2 tablespoons grated Parmesan cheese
  • 1/8 teaspoon dried oregano leaves

Preparation

Step 1

Cook macaroni as directed on package; drain. Heat oven to 350°. Mix macaroni, cottage cheese, beaten egg, salt, pepper, Cheddar cheese and frankfurter slices. Pour into greased 9-inch pie plate. Arrange tomato slices on top. Mix egg, Parmesan cheese and oregano; pour over tomatoes. Bake uncovered until bubbly, 25 to 30 minutes.
