Ingredients
- 1 cup non-dairy milk {Ripe Tip: I use unsweetened almond milk}
- 2 tablespoons EnerG Egg Replacer
- 2/3 cup yellow fine cornmeal {Ripe Tip: Not polenta, needs to be finely ground}
- 1/3 cup quinoa four {Ripe Tip: Can substitute whole wheat flour if gluten is not an issue}
- 1 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground mustard
- 1/4 teaspoon onion powder
- 2 large Hass avocados
- 8 corn tortillas
- Garnish {optional, but recommended}: shredded lettuce, Chipotle Cashew Crema {recipe to follow}, diced red onion, cilantro, hemp seeds, lime wedges or other taco toppings of choice
- Cashew “Crema”
- Makes about 1/2 cups
- 1 cup raw cashew, soaked over night, soaking water discarded and rinsed thoroughly
- 1/2 cup water + more to thin to desired consistency
- 2 1/2 teaspoon nutritional yeast
- 2 teaspoon lemon juice
- 1/2 teaspoon salt
Preparation
Step 1
Heat oven to 450ºF
In a shallow dish, whisk together non-dairy milk and egg replacer until frothy. Set aside.
In a separate shallow dish, combine flours and spices. Set aside.
Slice each avocado in half, vertically, and remove seed. In each half, slice into fourths, vertically, to end up with 16 total avocado slices.
Dunk each slice in the non-dairy milk mixture, and dredge in flour. Place on a sheet tray lined with aluminum foil and lightly sprayed with oil. Repeat coating steps until all slice are coated. Lightly spray coated avocado slices with oil and bake for 10 minutes. Flip slices over and bake another 5 minutes.
To assemble tacos: Heat tortillas wrapped in foil, briefly about 5 minutes, in oven. Place 1/4 cup shredded lettuce on tortilla, drizzle Chipotle Cashew Crema over lettuce, place two Cornmeal Crusted Avocados, top with red onion, cilantro, and hemp seeds. Serve with lime wedges.
Cashew Crema
Combine soaked and rinsed cashews, water, nutritional yeast, lemon juice and salt in a blender and process until smooth. Add water 1 tablespoon at a time to achieve desired consistency {Ripe Tip: I used 1 extra tablespoon water, but for a thinner “crema” you could add more.}
