Ingredients
- 1 (4- to 5-pound) beef eye of the round roast
- 1 1/2 cups ketchup
- 1/3 cup prepared yellow mustard
- 1/2 cup packed light brown sugar
- 2 tablespoons water
Preparation
Step 1
Preheat oven to 325 degrees. Place roast in large roasting pan that has been coated with cooking spray.
In medium-sized bowl, combine remaining ingredients; mix well. Pour over roast and into pan. Cover tightly with aluminum foil and bake 2 to 2-1/2 hours, or until meat thermometer inserted in center reads 160 degrees for medium, or to desired doneness.
Slice roast and serve with pan juices.
