Raisin Brown Bread

Ingredients

  • 2 cups of raisins
  • Boiling water
  • 1/2 cup of packed brown sugar
  • 1/4 cup of butter or margarine, softened
  • 1 cup of oatmeal
  • 1/2 cup of molasses
  • 1 egg
  • 2 cups of buttermilk
  • 2 cups of whole wheat flour
  • 1 cup of white flour
  • 2 tsp. of baking soda

Preparation

Step 1

Preheat oven to 350 degrees. Lightly coat the bottoms only of two 8x4" loaf pans with margarine or butter, then dust with flour. Put raisins in a bowl and cover with boiling water. Let stand 5 minutes, then drain. Blend sugar and butter until creamy. Add oatmeal, molasses, egg and milk. Stir in flour and soda. Add raisins. Pour into pans and bake for 40 to 50 minutes. Serve with soups, stews or bean dishes.
