Creole Macaroni Salad

This zesty salad is a fresh alternative to the typical pasta salad. It starts with ordinary pasta elbows but gets a creole slant with pinto beans, chili sauce and some dijon style mustard.
Ingredients
- 1 1/2 tsp salt, divided
- 1 1/2 cups elbow shaped pasta
- 3/4 cup mayonnaise
- 2 tbsp chili sauce
- 2 tbsp cider vinegar
- 1 tbsp vegetable oil
- 1 tsp Dijon-style mustard
- 1 small red onion
- 1/2 medium red pepper
- 1/2 medium green pepper
- 1 (15.5 oz) can pinto beans, drained and rinsed
- 1/2 tsp pepper

Step 1
1. Bring large pot of hot water to boil over high heat. Add 1 tsp salt and pasta and cook according to package directions, about 8 - 10 mins.
2. Meanwhile, in large bowl stir together mayonaise, chili sauce, cider viegar, vegetable oil. Dijon-style mustard and remining salt and pepper. Dice onion, red and green peppers.
3. Drain pasta in colander and rinse under cold running water until cool. Drain completely and toss with mayonnaise mixture. Stire in onion, peppers and beans. Serve immediately or chill until serving time.
