Vegetarian - Black Bean and Goat Cheese Quesadillas

Libby's favorite meal....must serve with grated cheese, salsa and sour cream

Ingredients

  • 1 can (15oz) black beans
  • 3 oz goat cheese, crumbled (1/2 cup)
  • 1 medium tomato, seeded and coarsely chopped
  • 2 cup corn kernels (2 ears of corn)
  • 2 scallions, coarsely chopped
  • 41/2 tsp fresh oregano
  • salt and pepper
  • 6 10-inch tortillas

Preparation

Step 1

Rinse and drain beand and mash till chunky.

Combine all ingredients (can be made ahead of time)

Spread bean mixture evenly over 1 tortilla and top with another tortilla and repeat with remaining bean mixture and tortillas.

Grill quesadillas until grill marks appear and filling is hot, about 2 minutes per side.

Cut into wedges and serve warm
