EXTRA MOIST PINEAPPLE UPSIDE DOWN CAKE

Ingredients

  • 1 (20oz) Can Crushed Pineapple with juice
  • 2 Pkgs. INSTANT PUDDING (1 LEMON & 1 VANILLA)
  • 3/4 CUP Brown Sugar firmly packed
  • 1 Box Yellow Cake Mix
  • 1 (15oz) Mandarin Oranges juice and all
  • 4 Eggs
  • 1/4 Cup Cold Water
  • 1/4 Cup Oil

Preparation

Step 1

1. Line a 9" X 13" cake pan with parchment paper and spray with Pam.

2. Mix by hand the crushed pineapple with the LEMON INSTANT PUDDING until thick and then pour the mixture into the pan.

3. Sprinkle the firmly packed brown sugar over the pineapple and pudding mixture.

4. Combine the cake mix, the VANILLA INSTANT PUDDING, the mandarin oranges with the juice, the eggs, the cold water and the oil.

5. Blend together on low speed and then beat at MEDIUM SPEED of the electric mixer for 4 MINUTES.

6. Pour the cake over the pineappple and BAKE at 350 degrees for 50 to 60 minutes or until cake begins to pull away from the sides of the pan.

7. DO NOT UNDER BAKE!!!

8. Cool in the pan for 5 minutes before turning upside down on serving plate and then peel off the parchment paper. You may want to scrape the pineapple mixture that sticks to the paper back onto the cake.
