Almond, Bean and Grain Burgers with Strawberry Shallot Sauce

Ingredients

  • Sauce:
  • 1 t olive oil
  • 1 T minced shallots
  • 1 t minced garlic
  • 1 c fresh / frozen strawberries, whole and hulled
  • 1/4 t fresh ground black pepper
  • 1/2 t raw honey
  • Burgers:
  • 1 1/4 t olive oil, divided
  • 1/4 c minced shallots
  • 3 large cloves garlic, minced
  • 1/4 c bulgar wheat
  • 1 1/2 c cooked black beans
  • 1/4 c sliced unsalted almonds, toasted
  • 1/2 t sea salt
  • 1/2 t fresh ground black pepper
  • 1/4 c nonfat plain Greek yogurt
  • 1/4 c whole wheat panko bread crumbs
  • 4 whole-wheat sprouted grain or multigrain hamburger buns
  • Greens, such as arugula or spinach

Preparation

Step 1

1. Prepare sauce: Heat oil in a small saucepot on med-high. Add shallots and garlic and saute for 1 min. Add strawberries and 1/4 c water and simmer 20 mins, stirring often, until berries break down completely and liquid reduces and thickens. Stir in pepper and honey. Remove from heat and set aside.
2. Prepare burgers: Heat 1 t oil in a medium saucepot on med-high. Add shallots and garlic and saute for 2 mins, until shallots are soft and translucent. Add 1/3 c water and bring to a boil. Stir in bulgur, return to a boil, cover and remove from heat. Let bulgur sit for 15 mins to absorbe water and cook.
3. Meanwhile, add beans, almonds, salt and pepper to the bowl of a food processor. Pulse mixture 25 times, until a coarse paste begins to form.
4. In a large mixing bowl, combine yogurt and bread crumbs. Add hot bulgur and mix thoroughly. Scrape bean-almond mixture into bowl and work ingredients together, either with clean hands or by folding with a large spatula. Divid mixture into 4 equal piles and form each into a 1/2 in thick patty. Place patties on a baking sheet or large plate lined with parschment paper and refrigerate for about 15 mins, uncovered.
5. Remove patties from refrigerator. Heat a large skillet on high. Brush remaining 1/2 t oil over surface of skillet. When skillet is very hot add patties and sear for 2-3 mins per side. Do not crowd.
6. Place 1 patty between each bun and spread about 1 T strawberry sauce. Add greens, if desired.
