Buffalo Hot Dogs with Pickled Jalapeno Slaw

Ingredients

  • 1 tbsp whole grain mustard, plus more
  • 1/4 cup organic mayonnaise
  • 3 tbsp pickled jalapeno juice
  • a drizzle of honey
  • 1 half small red cabbage, thinly shredded
  • 1 medium carrot, grated
  • 2 green onions, thinly sliced
  • 1/4 cup pickled jalapenos, chopped
  • 1/4 cup chopped cilantro leaves
  • salt and pepper, to taste
  • 4 uncured buffalo hot dogs
  • red butter lettuce, leaves removed whole

Preparation

Step 1

Combine mayo, honey, jalapeno juice, salt and pepper in a bowl. Combine cabbage, onion, jalapenos, cilantro and carrot in a larger bowl. Pour mayo mixture into cabbage mixture and toss well. Cover and refrigerate for a couple of hours.

Broil or grill hot dogs until done. Serve with lettuce wraps and whole grain mustard, and slaw on the side.
