Curried Rice Paneer Salad

Golden rice with a hint of curry and a sweet ginger dressing. Paneer is a fresh cheese available frozen in some grocery stores or fresh in Indian markets. A mild cheese such as farmer;s or bocconcini can be used instead.

Ingredients

  • 2 cups water
  • 1 tsp. curry powder
  • 1/8 tsp. salt
  • 1 cup white basmati rice
  • 1 19 oz can black beans
  • 2 cups paneer
  • 1 cup diced orange pepper
  • 1 cup tiny frozen peas
  • SWEET GINGER VINAIGRETTE
  • 6 Tbsp. lime juice
  • 1/4 cup cooking oil
  • 1/4 cup liquid honey
  • 2 Tbsp. finely grated ginger root
  • 2 tsp. curry powder
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • 1/8 tsp. pepper

Preparation

Step 1

Combine first 3 ingredients in medium saucepan. Bring to a boil. Add rice, stir. Reduce heat to medium. Simmer covered for 15 minutes, without stirring. Remove from heat. Let stand, covered, for about 5 minutes until rice is tender and liquid is absorbed. Fluff with fork. Transfer to large bowl and cool.

Add next 4 ingredients.

SWEET VINAIGRETTE
Whisk all 8 ingredients in small bowl. Makes about 1 cup. Add to rice mixture.
