Ingredients

  • 1/2

    cup vegetable oil

  • 1/4

    cup red wine vinegar

  • 1/2

    tsp salt

  • 1/8

    tsp Tabasco (you can use more)

  • 2

    cans black beans (16 oz)

  • 2

    cans Mexicorn (11 oz)

  • 1/2

    cup green onions (chopped)

  • 1

    large tomato (optional)

  • 1

    whole avocado (diced) (optional)

Directions

Drain and rinse beans. Mix everything except tomato and avocado. Marinate for at least 3 hours but no longer than 6 hours. Stir in tomato and avocado. Serve with tortilla chips.
