Honey Nut cupcakes

Ingredients

  • 1.75 cups cake flour
  • 1.25 cups flour
  • 1 cups sugar
  • 1 cup honey
  • 1 tbsp baking powder
  • 3/4 tsp salt
  • 2 sticks butter, room temp (in pieces)
  • 4 eggs
  • 1 cup milk
  • 1 tsp vanilla
  • 1/2 tsp almond extract
  • 1.5 c chopped nuts (pistachios, almonds, cashews)

Preparation

Step 1

Preheat oven to 350.
In a bowl, mix together eggs, milk, and both extracts. In mixer bowl, add flours, sugar, baking powder and salt. Add butter in pieces, mixing until combined. Add honey, followed by milk mix, beating until combined. Toss in nuts, and fold in by hand.
Scoop into cupcake pans and bake 15-18 minutes.
