Homemade Oatmeal Cream Pies

Ingredients

  • Cookies:
  • 1 1/4 cups butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup sugar
  • 1 egg
  • 2 tsp.vanilla extract
  • 3 cups oats
  • 1 tsp. baking soda
  • 1 1/2 c. flour
  • 1 tsp. salt
  • 1/4 tsp. cinnamon
  • ....................................
  • Cream filling:
  • 1/2 c. butter (softened)
  • 1 7-ounce container Marshmallow Fluff
  • 3 cup powdered sugar
  • 1 tsp. vanilla

Preparation

Step 1

In a mixer, cream the butter. Add sugars and continue mixing until the mixture is creamy. Add egg and vanilla, mix well. In a separate bowl, mix the dry ingredients together (oats, flour, baking soda, salt, cinnamon).

Add dry ingredients to wet ingredients and blend. Drop rounded balls onto a baking sheet and bake at 375 degrees for 11 minutes. Once cooked, place on a wire rack to cool completely.

Cream together butter and marshmallow fluff. Slowly add the powdered sugar and vanilla and beat until smooth and fluffy.

Add 1 T. scoop of cream filling to the bottom of 1 cookie and add another cookie to the top to make your Oatmeal Cream Pie!
