Steak with Spinach Couscous

Ingredients

  • 2-1/2 Tbs olive oil
  • 1-1/2 lbs flank steak
  • kosher salt & black pepper
  • 1 10-oz box couscous
  • 2 cloves garlic, thinly sliced
  • 1/4 cup pine nuts
  • 4 cups baby spinach
  • 1/4 cup crumbled Feta
  • 2 Tbs fresh lemon juice

Preparation

Step 1

Heat 1 Tbs oil in large skillet over medium-high heat. Season the steak with 1/2 tsp each salt & pepper. Cook to desired doneness, 4-6 minutes per side for medium-rare. Let rest before slicing.

Cook the couscous according to the package directions; transfer to large bowl.

Wipe out the skillet. Cook the remaining 1-1/2 Tbs oil, garlic, and pine nuts over medium heat, stirring, until golden, 2-3 minutes. Fold into the couscous with spinach, Feta, lemon juice, and 1/2 tsp each salt and pepper. Sterve with the steak.
