Ingredients
- 1 1/2 lbs. boneless, skinless chicken breasts, cut into chunks or strips
- 1/4 c. red wine vinegar
- 1 lime, juiced
- 2 t. sugar
- 1 t. salt
- 1 t. ground black pepper
- 2 green onions, minced
- 2 cloves garlic, minced
- 1/4 - 1/2 c. fresh cilantro, chopped (more or less to taste)
- Soft Whole Wheat Tortillas
Preparation
Step 1
Diced tomatoes
Shredded lettuce (I Love Spinach on these)
Shredded cheese
Light Sour cream
Salsa
Other favorite taco toppings
Directions:
Sauté chicken over medium high heat until browned. Add vinegar, lime
juice, sugar, salt, pepper, green onion, and garlic. Simmer 10
minutes or until chicken is cooked thoroughly. Add cilantro and
simmer for an additional 30 seconds. Serve on warmed tortillas with
desired toppings.
If you want to change it up a bit sometimes we use halibut instead of chicken! It is DELICIOUS!!!
