Tutti-fruities Cookies (vegan)

Ingredients

  • 1 cup raisins
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped pitted dates
  • 1 cup chopped walnuts
  • 1 cup wholemeal flour
  • 1 can crushed pineapple (fresh or canned)
  • 4 tablespoons cornstarch in a little water
  • 1 tablespoon vanilla essence
  • 1/4 teaspoon corn oil
  • 1/4 teaspoon salt

Preparation

Step 1

Preheat the oven to 180°C/350°F/Gas mark 4

Mix together the cornflour, oil, apricots, dates and vanilla. Add a little water or soya milk to aid mixing. Add the crushed
pineapple and walnuts. Sift together the flour and salt. Combine flour with the moist mixture. Blend thoroughly.

Drop by teaspoonfuls onto the prepared baking sheets. Bake for 8 to 10 minutes or until lightly browned. Do not overbake. Cool on wire racks.
