Oatmeal Filled Cookies

Crisp and buttery, with a tasty date filling

Ingredients

  • Cookie
  • 1 C brown sugar
  • 3 c quick oatmeal
  • 1 tsp baking soda dissolved in 1/4 cup hot water
  • 1 C flour
  • 1 C butter

Preparation

Step 1

Cream butter and sugar. Add remaining ingredients. Place on waxed paper and roll into a log about 2 inches thick. Refrigerate overnight. Slice into 1/4 inch slices. Bake at 350 degrees for 12-15 minutes until golden brown. When cool, spread the filling between two cookies.

Filling
1 12 oz pkg dates
1/2 C sugar
1/2 C water
Cook until thick. Cool before spreading on cookies.
