Pineapple-Orange Pound Cake

Ingredients
- 1 pkg Duncan Hines Moist Deluxe Pineapple Supreme Cake Mix
- 1 (3.5 oz) pkg vanilla instant pudding and pie filling
- 4 large eggs
- 1 1/4 cups orange juice
- 1/3 cup vegetable oil
- 1 tbsp grated orange peel
- 1/3 cup granulated sugar
Preparation
Step 1
1. Preheat oven to 350°F. Grease and flour 10-inch Bundt pan.
2. Combine cake mix, pudding mix, eggs, 1 cup orange juice, oil and orange peel in large bowl. Beat at medium speed with electric mixer for 2 minutes. Pour into prepared pan.
3. Bake 50 to 60 minutes or until toothpick inserted into center comes out clean. Cool 25 minutes in pan. Invert onto serving plate. Combine sugar and 1/4 cup orange juice in small saucepan. Simmer 3 minutes. Brush warm glaze on cake.

This was an amazing cake! I didn't have vanilla pudding so I used lemon instead. It came out very rich and moist. I also didn't like the idea of cooking the glaze, so I took orange juice and mixed it with powdered confectioner's sugar until I got the desired consistency. I have to say it was really really good. I call it "company cake" because it was way more special than a regular box cake.
This cake is fatastic. I use the Orange Cake mix instead of the pineapple is it was amazing!
I made this cake. It has a refreshing taste and smell. I took it to work and oh my gosh, my co-workers went crazy. They loved it. I did not have any to take home. They thought I was bringing some more today. I like it because it was hard for my co-workers to decide what how the pineapple mixed with the orange juice. Love it!
How about you add a can of crushed pineapple to the cake mix instead of the OJ and then top it with a glaze using some of the pineapple juice?
I found this recipe on the Pineapple Supreme Cake box and made a few small adjustments. Instead of oil, I used sweet cream unsalted butter (Just cream your eggs and butter together, then add your other ingredients) and instead of orange juice, I used Passion-Guava Orange Juice. Tasted so good and reminded me of Guava or Lilikoi (passion fruit) Bread. For a glaze I used powdered sugar and 1/3 up of Passion-Guava Orange Juice.
