Spanish Rice

Ingredients

  • 1 pound lean ground beef
  • 1 to 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 tablespoon oil
  • 1 green pepper, chopped
  • 2 tablespoons chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1 (14 1/2 oz.) can stewed tomatoes
  • 1 (6 oz.) can pitted olives, undrained, keep whole or cut in slices

Preparation

Step 1

In large skillet, heat oil and saute garlic and onions. Add ground beef, green pepper, chili powder, salt pepper and oregano. Cook until ground beef is done. Add rice and cook for 3 minutes. Add stewed tomatoes, breaking up tomatoes into smaller pieces. ix in olives with liquid. Add just enough water to cover. Simmer with lid on until rice is cooked, taking care not to burn rice (about 40 minutes or until done.) Stir occasionally while cooking.
