Ingredients
- 1 cup pluots, pureed.
- 3 cups sifted flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 c sugar
- 1/2 cup milk
- 1 tsp almond extract
- 2 sticks butter, room temp
- 3 eggs
- 1 egg white
Preparation
Step 1
Preheat oven to 350.
in a bowl, combine pluot puree, milk and almond extract. In another bowl, whisk together flour, baking powder and salt.
In a mixer, cream butter until fluffy. Add sugar, mix well. Add eggs and egg white gradually, mixing well after each. Add flour mix, alternating with wet mix, until all combined.
Scoop into cupcake pans, bake 15-18 minutes.
