  • 2 1/2 cups walnut halves.
  • butter
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla

Step 1


Heat walnuts in 375 oven for 5 minutes stirring once. Butter sides of heavy 2 quart saucepan. In sauce pan combine sugar, water, cinnamon, and salt. Heat and stir till sugar dissolves and mixture boils. Cook without stirring to soft ball stage (236 degrees). Remove from heat. Beat by hand 1 minute or until mixture just begins to get creamy. Add vanilla and the warm walnuts. Stir gently till nuts are well coated and mixture becomes creamy. Turn out on buttered platter of cooky sheet. Separate at once, using two spoons or forks. Makes about 1 pound of crunchy sugared walnuts. Delicious with crisp apples.
