Elaine's Peach Blueberry Pie

Hi there. Here is the recipe for the Blueberry-Peach Pie that I make. For this particular pie, I use the superfine sugar. Seems to dissolve soooo much better. This makes a 9 inch pie.

Ingredients

  • 2 cups blueberries
  • 2 cups pared sliced peaches
  • Splash of lemon juice
  • 2/3 cup sugar
  • 1/3 cup flour
  • 1/2 tsp. cinnamon
  • 1 1/2 tblsp. butter

Preparation

Step 1

Splash a little lemon juice on the blueberries and the peaches before putting in pie crust. You don't need alot, it just seems to perk up the flavor.

Heat oven to 425 degrees. Mix sugar, flour & cinnamon. Pour blueberries in bottom of pastry lined pie pan, sprinkle half of the sugar-flour mixture over, arrange peach slices on top, sprinkle with rest of the sugar-flour mixture. Dot with butter. Cover with top crust, seal & flute and cut slits. Bake 40 - 50 minutes or till juice begins to bubble through.

Adjust sugar amount according to sweetness of fruit.
