Ingredients

  • 3 cups chicken broth
  • 1/2 cup butter
  • 3 cloves garlic minced
  • 1 1/2 tablespoons dry taco mix
  • 1/2 cup flour
  • 1/4 cup whipping cream ( I used milk)
  • 2 cups cooked rotisserie chicken shredded
  • 1 can black beans rinsed and drained
  • 12 oz frozen corn, thawed
  • 1 large can green chillies
  • Tortilla chips
  • Shredded cheese

Preparation

Step 1

Heat oven to 375
In large sauce pan melt butter with 2 tablespoons of the broth. Gradually add the flour, stirring with a whisk. Add green chillies, taco mix, garlic, salt and pepper. Cook 1-2 min stirring constantly. Stir in milk and remaining broth, heat to boiling. Add chicken, beans and corn.
Place 1/2 the mixture in an un greased 11x7" baking dish. Add a layer of taco chips sprinkle with cheese. Repeat layers.
Bake 20-25 minutes
