Scones

Scones that you can make with different dried fruits. I have used dried blueberries, cherries, and apricots.

Ingredients

  • 2 c flour
  • 6 T cold butter, cut in small pieces
  • 3 T sugar
  • 2 teas baking powder
  • 1/4 tsp salt
  • 1/2 c dried cherries, coarsely chopped
  • 1/2 c dried apricots, chopped
  • 2 large eggs
  • 1/2 c 1% lowfat milk
  • 3 T slivered almonds, optional

Preparation

Step 1

Heat oven to 400. Coat a large baking sheet with non-stick spray.
Combine flour, butter, sugar, baking powder and salt in a large bowl. With a pastry blender, cut in butter until texture is a fine meal. Stir in cherries and apricots.
Beat eggs in a small bowl with a fork, remove and reserve 1T. Add milk to egg mixture and beat with a fork to blend. Add flour to the mixture, stir with a fork just until dry ingredients are moistened.
Drop 12 heaping Tablespoons of dough 2 inches apart on prepared baking sheet. Brush with reserved 1T egg and sprinkle with almonds. Bake 12 to 14 min or until golden brown. Serve warm or room temperature.
