Ingredients
- 2 tsp sundried tomato pesto
- 2 chipotle peppers in adobo sauce, chopped
- 1 stick unsalted butter, room temperature
- 1 Tbsp minced cilantro
- 1 tsp lime juice
- 1 tsp coarse salt
- 6 oz Cotija cheese, crumbled or Parmesan

Preparation
Step 1
1. Blend together pesto, peppers, butter, cilantro, lime and salt.
2. Place onto a piece of wax paper or plastic wrap and roll to form a log.
3. Twist ends to seal and chill for one hour or until firm.
4. Unroll and slice into tablespoon portions.
5. Top grilled meat or vegetables and sprinkle with crumbled cheese.
Tip: Store butter in the fridge or freezer and slice as needed
