Ingredients

  • 2 T olive oil
  • 1 medium onion chopped
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 . Garlic cloves chopped
  • Salt and pepper
  • 1 14 1/2 oz can diced tomatoes
  • 1 . Lb dry lentils
  • 11 c chicken broth
  • 4-6 fresh thyme sprigs
  • 2/3 c elbow pasta
  • 1 c shredded Parmesan cheese

Step 1

Heat the oil in large pot over medium heat. Add the onions, celery and carrots. Stir. Add garlic, salt and peppe. Sauté until all vegetables are tender, about 5-8 m inutes. Add tomatoes with their juices. Simmer until the juices evaporate a little and tomatoes break apart. Stir occasionally, cook for about 8 minutes. Add the lentils and mix to coat. Add broth and stir. Add thyme sprigs. Bring to boil over high heat. Cov and simmer over low heat. Until lentils are tender, about 30 minutes.
Stir in pasta. Simmer until pasta is cooked but still firm to the touch, about 8 minutes. Season with salt and pepper.

Ladle into bowls and sprinkle with cheese.
