- 1 cup fresh raspberries
- 1/4 cup sugar
- juice of 1/4 lemon
- 6 cups softened light strawberry or vanilla ice cream
- 1 10 oz prepared angel food cake

Step 1
Puree blackberries, raspberries, sugar and lemon juice in blender. pour mixture through sieve set over 2 quart freezer container to remove seeds, pressing firmly on seeds to remove as much liquid as possible. Discard seeds. Freeze 15 minutes. Add softened ice cream to puree and fold with spatula until evenly colored. Cover and freeze until firm, at least 4 hours or up to 1 week.
Sandwiches: With serrated knife, gently cut angel food cake into 24 slices (approx 1/2 inch thick). Heat ridged grill pan over medium heat. Add 4 cake slices and grill until lightly toasted 1-2 minuted per side. Repeat with remaining cake. Scoop 1/2 cup ice cream onto 12 slices. Top with remaining slices to make 12 sandwiches.
